Pecan Snowball Recipe

My Mom's favorite cookie recipe is for Pecan Snowballs. Mia and I made some for her for Mother's Day.


Pecan Snowballs

1 cup butter flavor shortening
3/4 cup powdered sugar
2 tablespoons milk or water
1.5 teaspoons vanilla
1 3/4 cups all purpose flour
1 cup oats (quick or old-fashioned, uncooked)
1/2 cup finely chopped pecans
1/4 teaspoon salt (optional)
powdered sugar

Heat oven to 325. Beat first four ingredients until creamy (shortening, sugar, milk, vanilla). Add combined flour, oats, pecans and salt, mix well. Shape rounded teaspoonfuls into balls. Bake on ungreased cookie sheet 15 to 18 minutes, or until bottoms are light golden. Roll in powdered sugar while warm. Cool completely on wire rack. Reroll in powdered sugar. About 4 dozen.

The Cookies sound scrumptious, I printed Betty a copy so maybe we`ll try some of them. What is vanilla powdered sugar?

Oops! That was a mistake. It's supposed to be 1.5 teaspoons of vanilla.

Then you just need plenty of extra powdered sugar for sprinkling on them after they've cooled off :)
